Yes, it’s still winter, but spring is fast approaching so I figured I’d better get in another update. I long for spring and warmer weather; of course in Texas, you could possibly experience all of the seasons in just a matter of days. Our weather changes like a pendulum swings…
Just a quick check-in to let you know how I am and what’s been going on with me since I’ve been very absent from blogging lately.

I truly admire those bloggers that are able to write a post daily or even weekly. These days I seem to lack ideas for new content, as well as the energy and time to write/edit/cultivate media/edit some more and then post. I had a while where I was posting regular content. And then back in the fall of 2018, things in my life took a turn when both of my parents became ill.

If you’ve been reading my blog for awhile now, you may recall that my father developed stage IV cancer back in 2018, and then my mother had a stroke. I began making monthly trips from Texas to Oregon, to spend time with my parents. My father passed in June of 2019, but I still continued to visit my mother regularly. That is until the Spring of 2020, when we entered a worldwide pandemic.

It’s been far too long since I have posted anything. I have been overwhelmed these past few months with family responsibilities, so writing just hasn’t been a priority. One thing that I do a make a priority, however, is sticking with my healthy eating habits. Proper nutrition helps my body respond to stress, fibro-flares, or whatever else comes along.
And just because it’s the holidays doesn’t mean we need to forego our healthy habits and miss out on holiday goodies. I love dessert. But I am also a sucker for healthy tweaks to recipes. One of my favorite cookbooks is The Recipe Hacker Confidential. She has delicious recipes that are free of gluten, dairy, soy, and processed sugar.
One of the things I find I need to help me keep my diet on track is plenty of protein. I love that this recipe has toasted almonds AND I added some of my favorite vegan protein powder. This recipe is a combination of the truffles recipe from The Recipe Hacker Confidential and one from Orgain.com for protein balls.
